Freezable Breakfast Burritos



I LOVE making these bad boys for my husband. Who doesn't like breakfast? These are easy to make, easy to freeze, and easy to eat! :) These are pretty healthy...aside from the sausage...these burritos are packed with protein, iron, and whole grains!

Ingredients (Makes 12-15 burritos)

10-12 whole wheat tortillas
1 dozen eggs
1 lb breakfast sausage
1 cup cheese
2-3 handfuls of spinach
1/2 cup chopped mushrooms
1/2 onion (chopped)

I usually make these once a month and I change the recipe every time. Sometimes I use bell peppers instead of spinach and mushrooms, and sometimes I just do the meat, eggs, and cheese. The fun part is that you decide what you want.

First...brown the sausage and drain all the nasty fat...
 
Next...saute the onions and mushrooms
After that...scramble the eggs and spinach
Combine all the ingredients in a bowl and allow to cool. Once the mixture is cool, then fill the tortillas however your heart desires. Fold them up into burritos and freeze. 

*Important! Allow the burritos to freeze for at least an hour on a plate or cookie sheet before placing them in bags to prevent freezer burn. This way, they wont freeze together.
